Cibo, Italian for food, and chat. Put the two words together and you get CIBOCHAT, a blog that seeks to examine food, taste it, chit and chat about it, and make others talk about it. CIBOCHAT is a space in which the focus goes beyond simple food and seeks to explore the communication, conviviality, experience, and ultimately the communion born out of the act of eating.

Created by Apicius International School of Hospitality, a member institution of the academic consortium Palazzi Florence Association for International Education, CIBOCHAT is where the different voices of PALAZZI come together – students, faculty, friends from the local Florentine community – to express the different forms of how we interact with food. What does a winemaker have to say pairing lardo with sparkling wine, or an architecture professor about the structure of a Chianti? The student who stumbles into a hidden vinaino and discovers that mortadella is not just produced in Bologna but as an unusual rustic version in Florence’s neighboring town of Prato. The fascination of Florence’s hidden food culture. These are some of the topics taken up by the voices and chats generated within this blog, within a city who is said to be at time staid but whose innovative side is starting to seep out of its Renaissance-saturated streets.
